Chemically, the non-saponifiable fraction of olives is made up of a complex blend of saturated fatty acids, sterols, triterpene alcohols and unsaturated and saturated hydrocarbons. The hydrocarbons make up over 90% of the non-saponifiable fraction, and the main ones are unsaturated hydrocarbons, with over 60% squalene. The saturated hydrocarbons have a carbon chain between C18 and C40. The alcoholic fraction includes about 2% aliphatic alcohols, which are mostly made up of linear-chain alcohols (20-22 carbon atoms), as well as another 2% of triterpene and terpene alcohols. Sterols (mainly b-sitosterol, campesterol and stigmasterol) and terpene alcohols (erythrodial and uvaol) make up another 2% of the non-saponifiable matter.
